Cassoulet With Smoked Ham

A classic French comfort food ready to serve in under an hour.

Ingredients

  • 1 package Shore Lunch® Minestrone Soup
  • 6 ounces smoked ham, cut into 2 inch pieces
  • 2 tablespoons vegetable oil
  • 1 cup diced white onion
  • 2 tablespoons minced garlic
  • ¼ cup freshly chopped parsley
  • 1 tablespoon freshly chopped rosemary
  • 2 (15.5 ounce) can Bush’s® Cannellini Beans, drained and rinsed
  • 4 cups water

Instructions

  • 1. Add the vegetable oil to a large stockpot over medium high heat. Add the ham and onions and cook for 3-4 minutes. Add the garlic and cook for 30 seconds.
  • 2. Add the soup and water to the pan and stir to combine. Bring the water to a boil, lower the heat and simmer for 20 minutes stirring occasionally.
  • 3. Add the cannellini beans, parsley, and rosemary to the pot and simmer for 5 minutes more.
  • 4. Remove the cassoulet from the heat and serve immediately.
